Why Would I Use Symmetric Encryption

The quick answer is: It is Cheaper and Faster

Because the algorithms used in symmetric encryption has less complexity than asymmetric encryption -- it is easier and cheaper to write programs using it

So why wouldn't I use symmetric encryption ?
